2008 Reverie Cabernet Sauvignon

Straight Out Of the Bottle: It is clear that the 2008 Reverie Cabernet Sauvignon needs a little time to open up. This wine is complex with notes of chocolate, raspberry, oak, and anise. While, the tannins were a bit robust straight out of the bottle, our hopes are that they will hopefully mellow with a little time in the decanter. This vintage may also benefit from a little more time in the cellar but it is drinking well right now.

Decanting (1-1.5 hours): With time this wine opened up into a fantastic cab! True to the varietal, this Cabernet Sauvignon is on the bigger side with nice notes of dark red fruit, oak, and a hint of cracked black pepper. A nice surprise coming out of this vintage is a strong jammy note of fresh raspberries mixed with melted milk chocolate. The oak characteristic mellowed out quite a bit and is now melding perfectly with the other notes. Overall, we are extremely pleased with this wine! While it is on the pricier side, if you get a chance to enjoy the 2008, it is definitely worth it!

2006 Salvestrin Three-D Cabernet Sauvignon

 

*Straight out of the bottle: First tastes instantly tells us that this wine is extremely powerful and needs time to open up; super complex.

We chose to decant this wine as per recommendations from the winemakers.

*Decanted (for about an hour and a half): With time, we couldn’t believe how phenomenal this wine opened up into! It was full bodied, hitting the varietal characteristics spot on for a true cabernet sauvignon! Indeed, this is an extremely BIG, BOLD, and MASCULINE wine that will knock the socks off any cultured wine drinker. Flavors of ripe and juicy dark fruit led into notes of espresso, annice, mint, dark chocolate, berries, vanilla, and oak. I couldn’t have asked more from a wine that continued to open up and change as the evening continued. Towards the back of the palate, we got the traditional Salvestrin finish that stays with you FOREVER! If you get the chance to try this amazing wine, it is OMG so worth it!

2007 Salvestrin Estate Cabernet Sauvignon

We chose to decant this wine as per recommended by the winemakers.

*Decanted (for about an hour): First tastes solidifies any notion that Salvestrin is making a great cabernet sauvignon! This 2007 estate cab is one of the best wines we have tried in a while and we couldn’t expect more. It is the textbook definition of what the varietal should taste like – it is a BIG, strong, powerful wine that is very fruit forward, transitioning to a jammy middle with hints of cream de cassis and vanilla bean, and finishing with oak, mint, and anise – and just a subtle hint of cocoa. The velvety tannins add to the structure and complexity of the wine making it very enjoyable to drink.

*For those of you who can get your hands on Salvestrin’s wines, this is fantastic!

*Food Pairing: We paired this great wine with a bacon-wrapped black pepper filet and grilled asparagus. This powerful cabernet sauvignon really added to the enjoyment of the meal by complementing the peppery and meatiness of the steak and the rich and saltiness of the bacon. Enjoy!

Salvestrin 2006 Estate Cabernet Sauvignon

Another fantastic, quality wine from Salvestrin!

*Straight out of the bottle: This cabernet sauvignon is a perfect match in alignment with classic varietal characteristics. Hints of lush red fruit including cherry and fresh, ripe cranberries transition on the palate into fresh sprigs of mint and anise, which ends with a nice, dry oaky finish that lingers on and on.

We chose to decant this wine as it seemed like it could use some more time to soften and open up.

*Decanted (for about an hour): With time, this wine became even more fantastic! The wine  softened up quite a bit, allowing the tannins to mellow down. While this wine kept its nice, dry finish, it transformed into becoming more fruit forward and added a nice ‘juicy’ quality that was very refreshing. For an estate cab, this wine definitely is competing with some of the other wineries reserves and is just as good (if not better) in our opinion.

Pairing: We paired this cabernet with a black peppered filet and grilled asparagus. The strong cabernet varietal characteristics helped add to the enjoyment of the meal by complementing the peppery steak tones.

Salvestrin 2008 Three-D Cabernet Sauvignon

Latest wine club release from Salvestrin – 2008 Three-D Cabernet Sauvignon – Named after the three daughters of the Salvestrin family.

*Straight out of the bottle: You know (or at least hope) that this wine is going to be AMAZING, when it is described to you as the “Barry Bonds” of wine. The bouquet on this wine couldn’t have been more perfect – with hints of cherry, ripe berries, licorice, and oak, we knew this wine was going to be great. First taste impressions instantly tells us that this wine has lived up to its built-up reputation. This wine has fantastic characteristics with dark fruit and rich, black cherry on the front which leads into flavors of oak, vanilla, and cocoa. It is very full bodied and one of the biggest, masculine, most powerful wines we have had in a while, if not at all. This wine also has this wonderful, crisp, clean finish that stays with you and just doesn’t want to let go. It couldn’t be drinking more perfect right now.

*Decanted (for about an hour): With time, we couldn’t believe this wine could get any better! It kept its full bodied, varietal characteristics while adding in more pleasant notes as this wine further oxidized. New flavors of licorice, mint, berries, melded together and added to the already amazing hints of rich, red fruit, vanilla, and oak. Towards the back of the palate, we got a pleasant surprise of cocoa and rich chocolate that added to the finish that stays with you FOREVER! If you get the chance to try this amazing wine, it is worth it!
